Are apples a starchy fruit?

No. Ripe apples are not generally treated as a starchy fruit. Unripe apples do contain starch in the flesh, but as the fruit matures that starch is converted into sugars—growers even track the change with a starch-iodine test when deciding when to harvest.

Because of that conversion, everyday eating apples taste sweet rather than starchy, and dietary guidance places apples in the Fruit Group rather than with starchy vegetables such as potatoes or corn.
