Basic caramel needs only sugar, heated until it melts and browns, often with a little water to help it dissolve evenly.
Caramel sauce and soft caramels add butter and cream (or milk), and often vanilla and salt, to the cooked sugar. Firmer caramel candies may also use corn syrup or sweetened condensed milk to keep the texture smooth and chewy.
